Apple Cider Salad Mold
Makes 8-10 servings
1 ¾ C. apple cider

Heat 1 C. apple cider
to boiling; remove from heat. Add lemon jello and stir until dissolved.
Add ¾ C. cold apple cider & chopped apple. Pour into 5 ½
C. ring mold. Chill until set. Soften 1 pkg. gelatin in ¼ C.
cold water. Whip cream cheese & applesauce until fairly smooth.
Pour into saucepan and stir in evaporated milk & softened gelatin.
Heat over low until gelatin is completely dissolved; stir constantly.
Cool at room temp. Pour this mixture over firm cider layer. Chill until
set, 2-3 hours. Unmold and garnish with apple slices if desired. |
