Fancy Indian Wild Rice
Makes 4-6 servings
1 C. Wild rice |
Wash rice. Bring 1 tsp. of the salt and rice to a boil in2 ½ C. of water. Simmer 35-40 minutes until rice is tender and water is absorbed. Fry bacon until crisp, remove from pan and set aside to drain. Add onion and garlic to skillet and cook until onions are tender, being careful not to burn. Add egg mixture and cook until firm and light brown. Remove from pan and cut in thin strips. Crumble bacon and add to eggs. Add eggs to rice and heat through. If you wish to add mushroom, add them when cooking the onion and garlic and proceed as stated above.ur. |
