Freya's Own Rice Pudding
Makes 8 servings
½ C. uncooked
regular rice |
Add rice to boiling water. Cover tightly and cook for 20 minutes over low heat until rice is tender and water is absorbed. Beat egg yolks slightly and combine with sugar and salt. Carefully stir into rice. Add raisins and almonds. Stir in milk. Mix thoroughly. Beat egg whites until stiff and gently fold into rice mixture. Pour into 1 ½ quart casserole or baking dish. Bake at 300 for 1 hour and 20 minutes. Stir once during baking. |
